Strawberry Mango Salsa- Served with cinnamon pita chips
3/4 Cup Strawberries, Finely diced
3/4 Cup Mango, Finely diced
1/4 cup Red Onion (Lots of Red Onion makes my sinuses itch, so I use a few tablespoons)
6 Basil Leaves, Finely chopped
1 Tbsp Fresh Lemon Juice
1/4 tsp Sea salt (I used regular salt)
1/4 tsp Black Pepper
Combine all ingredients and allow to sit in the refrigerator for a few hours, covered.
(If kept sealed, should keep for about a week)
My sister (Emily Dean) started a blog of all the delicious recipes she's tried and her family enjoyed. I thought it was a great idea! Instead of having to remember what book or website or magazine I found recipes, I thought I would compile them into a blog. I may not be completely consistent with entries, but it's not really for you anyway. However, feel free to enjoy any of these recipes! I will try to add notes after I cook/bake them. Happy Cooking!

Funny Sister conversations: Part 1
Me: So, I got a pedicure for Brittany's wedding. The next weekend I kicked my own heal and bent back my left big toe nail, breaking the polish. Saturday I got a pedicure and I just kicked my desk, bent back my left big toe nail breaking the polish.
Emily: Oh me, what is with you bending your toes back? Didn't you do that at Jillian's wedding?
Me: Well, that was because I fell down the stairs.

City of Angels
Is the feeling of rain on your skin worth giving up eternity? Is the knowledge of true love worth forever? Today I watched 'City of Angels' for the first time. I know, I know. Where have I been, right? It was sad, the music was great, and I love Meg Ryan. During the whole movie, however, I was wondering what the point/message the writer/producer was trying to make. Is heaven and eternity worth giving up just to 'feel' or just to have love? Does it mean that angels (given free will) are selfish? Enlighten me on your thoughts.
I did like this quote from the movie, said at the end: 'Someone dying isn't punishment, it is life.'

Ice Cream Dream
Tonight when I got done working out I went to Chick-Fil-A for a healthy dinner (grilled chicken sandwich and a salad, yum!). I sat in a middle booth and after I got situated I looked up and there was a man eating an ice cream cone sitting in the booth across from me. We smiled and continued eating. When he was done eating his ice cream, he commented on how healthy I was eating ( I was trying). Then he asked me if I was a dancer, ha. Kind of a random question, but that opened a door for many different topics to discuss. He said he is church of Christ, I said I was too, and we began discussing different congregations around town. Come to find out, his cousin married my high school principal, he is from Fayettville and he had 2 single sons (ha). Although he didn't show me a picture or really try to 'hook me up' with his sons, he did tell me about their professions and how proud he was of them. We had a lovely talk. It made my day complete because a kind man took time to speak to me because I was sitting alone. Go out of your way to be kind to people. You never know when someone might be having a bad day or just need a 'pick me up' conversation. Even a good day becomes better instantly when kindness is shown.

For Shelly, and the others who care
Shelly hasn't been able to make it to my new apartment yet and she wanted me to send her some pictures. So, I decided to just post them on here so that others may see my new living establishment. It's just a humble abode, but I do like it.

If anyone is in town, I would love for you to stop by. I would even make some brownies :)

Pondering
Do you ever wish you had made different decisions in your life? I often wonder where I would be had I have chosen a different path. Had I gone to a different college, what would I have studied?Had I gone to a different college, would I still be in Nashville? Had I stayed at home, would my life be as it is right now? Had I said that one thought that was constantly on my mind, would things be different? Had I not said that one thought that was falling off my tongue, would things be different? The choices we make impact our lives so much more than I can fathom. No one knows if a choice he/she makes will bring them good or bad. It if will lead him/her down the 'right' path. But is there a wrong path? If we trust in God, shouldn't the path lead to the same place? I sometimes forget that just because it may be difficult does not mean it is the wrong way. He did say the way will be long and hard, so I will have trust and faith in Him to guide me.
